Snickers Dates

This makes the best after-dinner snack or anytime snack really, and it’s perfectly macronutrient balanced helping stabilise blood sugars.

Dates are rich in magnesium, and vitamin A & B complex and are also a source of insoluble dietary fibre. Not only that, they are a great source of antioxidants and a source of carbohydrates (perfect for helping build milk supply if breastfeeding). 

In addition to this, dates have been shown to positively affect birth outcomes when consumed in the last month of pregnancy, helping to ripen the cervix in preparation for labour.

It’s also the perfect one-handed snack making it ideal for breastfeeding (IYKYK)

Here’s how to make these peanut-choc coated dates

Makes 16

WHAT YOU NEED 

  • 16 Medjool dates (pitted)

  • ¼ cup peanut butter 

  • 200 dark chocolate 

  • 2 tbsp of coconut oil

  • A pinch of sea salt flakes

  • Coconut flakes for garnish (optional)


HOW TO MAKE 

1. Create a pocket in the date fruit and generously fill it with peanut butter

2. Melt dark chocolate and coconut oil together until smooth (either over the stovetop in a glass bowl or in the microwave) 

3. Dip the dates into the chocolate and coconut mixture, ensuring they are fully coated. Transfer to a wire rack with a paper towel underneath for the excess chocolate to drip onto. 

4.  Sprinkle sea salt and coconut flakes (optional)

5. Eat immediately or allow them to set in the fridge.

6. Store in an air-tight container in the fridge for a pre-prepped snack (will keep for 1 week)
