Gut-Loving Beetroot Feta Dip

I can never resist a good dip. Dips are the ultimate snack accompaniment, and this one is a cinch to make - the food processor does most of the work. Not only is this dip quick and healthy, but it also looks beautiful on a table. 

The Power of Beets

Beets are the star of this dip, and they bring a lot to the table, nutrition-wise. They're rich in fibre and one of the best sources of glutamine, an amino acid that helps maintain a healthy intestinal tract. Beets aid in detoxification of the body and help reduce inflammation. Plus, they're just so tasty! If you're like me and don't eat enough of this vibrant vegetable, this dip is a great (and easy) way to incorporate more beets into your diet.

Makes 4 servings

WHAT YOU NEED

  • 2 large beetroots

  • 3 tbsp olive oil

  • 2 cloves garlic

  • 50g feta cheese

  • 1/2 tsp salt

  • 1 tsp cumin

  • 1 tbsp beetroot kvass from Clover Ferments (use code NURTURED10 for a discount)

HOW TO MAKE

1. Peel and cut the beetroots into small cubes.

2. Place the beet cubes in a baking dish and drizzle with 1 tbsp of olive oil. Sprinkle with salt and cumin.

3. Roast the beets in a preheated 180°C oven for about 45 minutes or until they are fork-tender.

4. Transfer the cooked beetroot into a food processor.

5. Add garlic, feta cheese, the remaining olive oil, beetroot kvass, and additional salt and cumin to taste.

6. Blend until the mixture is smooth. If it's too thick, you can add a splash more of the beet kvass or olive oil.

7. Plate the beetroot feta dip, drizzle with a bit of olive oil, and sprinkle with toasted pine nuts.


Serving Suggestions:

You can enjoy this delightful beetroot dip in various ways. It pairs perfectly with crackers for a crunchy combo. Alternatively, spread it on toast for a tasty snack or use it as a side accompaniment with a Mediterranean falafel bowl.
