WHAT YOU NEED
8 medjool dates (pitted)
2 tbsp honey or pure maple syrup
1 tsp vanilla extract
1 tsp cacao powder
¾ cup raw almonds
4-5 tbsp melted coconut oil
½ cup desiccated coconut (for coating)
HOW TO MAKE
Place all ingredients (except for the desiccated coconut) into a food processor and blend until the mixture resembles a paste.
Add more almonds or coconut oil depending on the consistency of the mixture. Either add more almonds if the consistency is too wet or more coconut oil if the mixture is too dry.
Roll into tablespoon-sized balls and coat in desiccated coconut
Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
