Nut & Oat Crackers
These homemade crackers are loaded with quality ingredients and hit all the key macronutrients. Trust me — you'll be making these on repeat!
makes 40 crackers
WHAT YOU NEED
1.5 cups oats (blended until it resembles a flour like consistency)
1/2 cup ground almonds
1/2 cup hazelnuts & walnuts (roughly chopped)
1/2 cup plain flour
2 TBSP collagen powder (I use Cell Squared use code: FIONA10 for 10% off
2 TBSP chia seeds
1/2 TSP baking powder
110g melted butter
2 egg whites
4 TBSP ice cold water
HOW TO MAKE
Preheat oven to 180C and line 2 oven trays with baking paper
Combine all dry ingredients in a mixing bowl
Add melted butter and mix well. Add egg whites and water and allow to stand for 10 mins while the chia seeds absorbs the liquid
Use your hands and knead the mixture to bring it together, adding a dash of water if needed
Halve the mixture and rollout each half on the lined baking tray to desired cracker thickness. Cut each tray into squares
Bake until lightly golden for about approx. 20-25 mins
Allow to cool and store in an airtight container
